Shaved Carrot and Butternut Squash Salad with Sunflower Seeds
Ingredients
2 tablespoons white balsamic vinegar
1 teaspoon whole grain mustard
2 teaspoons minced shallot
Kosher salt
Freshly ground black pepper
3 tablespoons olive oil
4 oz butternut squash (peeled)
3 small carrots (peeled)
¼ cup roasted, salted sunflower seeds
6 cups baby arugula
Vinaigrette Directions
In a small bowl, combine vinegar, whole grain mustard, minced shallot, ¾ teaspoon kosher salt, and ½ teaspoon fresh ground black pepper. Pour olive oil in slowly, while whisking ingredients together.
Salad Directions
Using a vegetable peeler, shave peeled carrots and peeled squash into a large bowl. Add arugula and sunflower seeds and toss. Pour vinaigrette evenly over salad, and toss until thoroughly coated. Sprinkle with kosher salt and fresh ground black pepper.
Serve immediately.
